The way I do meal planning is -

  1. Start with dinners - decide what to have each night, thinking about what ingredients you already have in the fridge, freezer and pantry. I always like to plan for 1 or 2 VERY easy dinners for those nights that I don’t have the capacity to spend much time cooking

  2. Decide which dinners will make enough for leftovers - lunch (or dinner the next night) is sorted. I’m a big fan of the cook once, eat twice philosophy

  3. Choose a couple of easy options for breakfasts, lunches and snacks

  4. Write my shopping list or place an online groceries order

I think the two most important aspects of meal planning are: keep it easy and include foods which you enjoy eating!
